The potato originated in South America, spanning back to the early 1400's with over 200 types of wild potato species. It was a Peruvian variety with a distinct yellow flesh and rich flavor that originally inspired the creation of the Yukon Gold. Yukon Gold potatoes were first bred in Canada in 1966 and are a cross between a wild yellow-fleshed Peruvian spud and a white-fleshed variety known as Norglean from North Dakota.
